  • Time For Some More Ribs

    Decided to do some ribs today.

    Picked up a couple of St. Louis style racks from Safeway.



    Membrane pulled and ready for seasoning.



    Light mayo slather.



    Dusting of Mad Hunky General Purpose Rub.



    Got some on the floor. Tina said "No problem. I'll get that for you."



    Disting of brown sugar.



    Cooking on my other drum today.



    Hickory chunks in some RO lump at hopefully 240ish. I say hopefully as I have not cooked low temp on this drum in a long time. Temps seem to be creeping. I don't know if it's the 15 mph winds or if it has a leak somewhere.

    The yellow drum is getting prepped for craigslist.



    Need to clean it up and touch up the paint a bit.

          She turned 14 in December so at this stage I really don't pull her away from anything that she enjoys food wise. Although my veterinarian brother-in-law did convince me to stop giving her bones.

          The drum seems to have settled in nicely temp wise.

          Yeah, I'll probably have to paint it. Or at least knock the rust off and primer it. It's quite a bit heavier metal than the other one which is why I decided to keep it.

              Well, 5 actually. 2 Webers, 2 UDSs and the SnP. Mrs. DDave is not happy about how much room they take up on the patio in the winter time.

              So to "make room" for the reverse flow I agreed to sell one Weber, one UDS and the SnP. I figure I really won't lose any capacity since the RF will hold quite a bit if I need to cook for a crowd.

                  About 4 hours in.

                          The old rust bucket didn't disappoint.







                          I don't know if it's the heavier metal is better at radiating the heat back or if I got some decent ribs for a change from Safeway.

                          Dayum, they were moist, tender, and juicy.
