  • Lamb shoulder

    Wife wanted gyros with football today so I took a roast out of my freezer stash. Inserted garlic cloves throughout and coated with olive oil, dill, salt and pepper. Gave it a fist size chunk of hickory and gave it 3 hours until internal hit 160.

    One thing I have noticed about lamb in my limited experience... it likes to be rarer. Sure..some don’t care for rare meat..but try it at 140-ish sometime.

      Usually that is where I would have left it, but this was sammich and gyro bound from the start! Easier to eat at my press without flinging juice all over! A little tzatziki sauce sets it up good!!

                  That looks good. My friends mom had a hanging set up for cooking lamb for gyros. She was from Greece and my friend told me whatever you do don't call them gi rows call jeer-oh if my typing makes since. Anyway when we got there the first thing I asked her was are the gi rows ready? I said it that way by accident. Before I could correct myself she hit me on top of the head really hard with a wooden spoon. I have never mispronounced it since.
