    I had about 10 bags of Green Chile left from last season and with my supply replenished I decided to use them on my soup kitchen gig.

    The cake lady at Walmart is getting really creative... looks like a pepper head???

              Remember I'm cooking for 150...
              I've used several of the Pioneer Woman recipes as a base and multiplied them up.

              I substituted can corn for ease of preparation and added chicken and diced red potatoes. I also cut down the Chile so it wouldn't be too spicy for the kids. In a small batch you definitely want to roast the ears of corn for the added flavor and a hefty pound of chicken will make an 8 serving batch meaty enough.

              I also had a request last night for the Spanish Rice recipe...

              Spanish Rice

              This recipe fills a full size aluminum steam table pan and is about fifty small servings.
              For more or less, multiply or divide.

              2 sticks butter
              4 teaspoons minced garlic
              8 cups Royal Basmati Rice
              16 cups Stock from Knorr Hispanic Chicken Granulated Bouillon “Caldo con Sabor de Pollo”

              Bring the chicken stock to a boil in a separate pot. In a large heavy pan on medium high heat brown the minced garlic in butter. Add the rice and stir constantly until golden brown. Transfer the rice to an aluminum tray and add the stock stirring well. Cover the tray with foil and cook in an oven @ 350 degrees for 90 minutes. To hold turn the oven off and the trays will stay hot for several hours.

              Sautéed Basmati rice cooks up nice and fluffy in large batches.

                Thank you Sir. The Spanish rice recipe looks great as well. Just picked up a 20# bag of basmati so I know where the first bit is going

                  Sounds really good!

                  Green chilis, she doesn't show them or say what kind.....and there are about 7689 different varieties.
                  (Kinda like some of Fish's steak temps)

                    Since the recipe list the Green Chile in ozs, I think they are using the ones in a can.

                    That's like buying pre cooked bacon!!!
