After a long evening and a short night, it's time to do the briskets for next weekend. The UDS wasn't even cooled off after those damned, recalcitrant pork butts yesterday but I restoked her this morning about 6:45. This time with hickory chunks throughout the RO briquettes.
I'd trimmed the briskies last night, injected them, and gave them a massage with Tatonka dust.
Hope they aren't as stubborn as the pork was yesterday!
