  • Grilled Peruvian Chicken...

    I ran across this recipe a while back & decided it was time to try it oot. Made up the marinade & marinaded some thighs & legs for 12+ hours or so. Fired up the SToK w/ a split of hickory & put on the chicken...

    Aboot halfway through...

    Almost done...

    And on the plate along with a batch of shells & cheese w/ some cut corn & green chiles...


    Here's the recipe...

    GRILLED PERUVIAN CHICKEN
    • 1/2 cup soy sauce
    • 3 Tbs fresh lime juice
    • 5 garlic cloves - minced
    • 2 tsp ground cumin
    • 1 tsp smoked paprika
    • 1/2 tsp dried oregano
    • 2 Tbs vegatable oil
    • 4-5 chicken legs
    • 4-5 bone in, skin on chicken thighs
    • lime wedges


    In a bowl whisk together soy sauce, lime juice, garlic, cumin, paprika, dried oregano & vegetable oil. Pour into ziplock bag, add chicken, seal it up & let marinade overnight or up to 12 hours or so. Grill to proper temp then put on plate & let rest for 5 to 10 minutes. Serve with lime wedges if desired.



    The chicken came oot nice & juicy, good flavor. If I were to change anything I would add more lime juice & maybe some lime zest.

        looks pretty good

        But you got to wonder when soy sauce got to peru

        De-bone the drumsticks - would be even better
