  • Shredded Chicken Fritters

    Been messing aroond with this for a couple months. We have shredded chicken aroond quite a bit and have been looking for different ways to use it up after tacos, salads, sandwiches, etc. I fried up some Mad Hunky fritters a while back and loved them.

    This Thyme was shredded chicken, green onions, 2 pressed Garlic cloves, zest of 1 Lemon, 2 eggs and Italian Garlic and herb bread crumbs. Fried in Butter and EVOO. Drizzled with fresh Lemon juice and a dipping sauce of sour cream, Tabasco Jalapeņo sauce, fresh Lemon juice and SnP.

    Overall, its pretty dang tasty with lots of flavor. IF the rest of the family were not eating it, I would have put in some finely dice Jalapeņo and or Onion.

    Pretty happy with it so far, and was just thinking finely diced Pineapple would probably work also.

    Anything else y'all can think of to consider adding?

      Looks great I'd need some sort of cheese put on after the flip but I love cheese. Bet they'd make a dam tasty sandwich.

                    all day for that masterpiece!

                    I'd forget the pineapple. Just me. Maybe some shredded carrot... or fresh peas.

                        Well dang, that is right interesting.... crab cakes with chicken.... I have some pulled chicken in the freezer right now.. might have to give this a whirl...

                              maybe instead of bread crumbs, make a box of Stovetop Stuffing. then mix that in. You could also go more Creole with your seasoning for a change of pace. Or if you use bacon, bake it first in the oven with brown sugar for a lighter, sweeter addition to the fritter. Could julienne some serrano peepers, cumin, fresh cilantro, and chili pepper. a little Pico de Gallo on the side.

                              oohhh, find a good Thai recipe. That would spice up things. With some maybe with a small soup, or noodles, maybe a lettuce wrap of sorts. and spring rolls! lots of so and hot mustard!
