  • Pork or beef.

    Couldn't decide so I did both. Mad Hunky rubbed pork shoulder and two Chuck roast. Decided to keep it simple on the chucks and went with Montreal steak rub. I've been wanting to give that a shot. 12 hours in . About to check the beef. Shoulder is just coming out of the stall.

            All done. 16 hours to hit 203. Maybe the shoulder was still a tad frozen ? Foiled and resting under towels. I will be pulling in about an hour.

                And here are the finished products. Beef on the left and pork on the right. Well at least that's the way it is on my screen. Main course is out of the way for the week as we will enjoy these in a variety of ways.
