  • The Quesapizza......

    So, I had some fun playing around with some stuff. I know this isn't new per say. It started with the premise that my kids love a good pizza. The place we always ordered from is shut down due to a squabble with the landlord. Their favorite pizza is chicken, pepperoni, and jalapenos. So, the details.

    I put 3 chicken breasts in the the bath with my standard recipe, Rich's Sweet Heat and some balsamic vinegar. 149° for an hour. Then, finished it with a little searing in the CI, slice after a rest.

    The next item I used were fresh/raw flour tortillas we get at Costco. They freeze well and easy to cook. They make a Huge difference in terms of quality and taste. Here's the raw version:



    So, I just put them in a pan on med high heat, no oil for a minute or two on each side and they are done.

    So, I set up a pizza bar basically. You'll notice some ranch dressing that my kids also love with chicken. So, everyone made their own pizza.



    However, everyone got the same base. The kids also put the ranch here. So, a tortilla, sliced chicken and another tortilla on top. Have the quesadilla done at this point.



    Then, you hit the bar. One son likes the softer, pickled jalapenos. I like the fresh cut with some texture. Here's his meal:



    I built mine and took a few pictures along the way:

    Then, I threw them in the oven on pizza stones at 425° for 10 minutes. They turn out absolutely fantastic. And, according to my wife, they reheat extremely well in the toaster over. Anyway, here was my dinner:



    Gonna have to keep doing this unless my pizza guy opens back up.
