  • cheese & bacon cold smoke

    Didn't know which forum to put it in so since the cheese is on top that's what I chose! I joined Costco so I could buy a pork belly without having to get a case.
    So the lucky hunk o' pig sat in the curing frig for 10 days...and hit the smoke this evening. Gonna go all night...so probably 14 hours of smoke. The cheese is Tillamook extra sharp white cheddar, Tillamook medium cheddar, and Costco brand cheddar.

    Well... if things go south..at least you have the bacon to catch some cheese Nice combo smoke! Excellent planning!

              Thanks, guys. Set up is just a drum smoker, 18" amazen tube, and some frogmat. I guess the big part is the bacon hooks I just got.
              I got some nice color and smoke on both the bacon and cheese. Very happy with it!

                      Looks great what'd you think of the Costco belly? Price good? Just got a Sam's membership but might have to get a Costco also.

                        $2.49 a lb. Helluva lot better than the case price th local guy gave a year ago. And they're opening a store by Cabela's! Although by next week Cabela's might be known as BassPro....dammit

                          Everything looks fantastic, and I know that is some good stuff (I got to try some of Kent's bacon...the guy knows what he's doing!!)...did you get 14 hours of smoke on that? beautiful color on the cheese too. I've never took cheese that long...I was afraid it would be too much. for that hand slicing job.

                            oh no....I pulled the cheese after about 4 hours. The bacon stayed on overnight. The amazen tube does a great job in my drum smoker for that.

                              Thanks Kent! Costco has a deal that if you put money on a Costco card anybody can go in and spend it. Think I'll hit up the brother in Law and do this for me. Wish we could've got a Costco card but they don't handle some of the restaurant stuff like Sam's does.
