    Good stuff,, Pop's brine recipe is good but next time I will cut back on the sugar,,, I Cold smoked these with pitmaster pellets, I had three bellies, one plain, one white pepper and one CBP, the plain was smoked for 12hrs and was eatin yesterday,, Wife and kids loved it,,, other two were smoked for another 12hrs, (24hrs of smoke on the pepper ones) We yet have to try these,, But the wait time in the fridge after the smoke I think helped out mellowing down the smoke cause the pepper ones really were smokey smelling when I first took them out.

            That's just an excellent job.

            Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
            My best asset however is the inspiration from the members on this forum.

                    Thanks everyone, I think I have three more bellies in the freezer from recent trades plus the hog we just had butchered ( and them bellies are big) so Time to start putting brine together,,, I think this is the easiest thing I have done in the smoking world LOL
