Default Gonna try jerky this weekend

I have smoked everything besides fish in my Yoder Kingman except jerky...I am planning on using turkey and flank steak to make my jerky and I am looking for some suggestions on temp and time of cook...thanks guys

it's kind of subjective subject, and depends on a lot of variables. What cuts you're using, how thick they are, are you using cure or not, how dry you like it, etc.

Personally, if I'm using a cure I go as low as possible on temp for as long as it takes to get them to the dryness I like. Say around 100 degrees for anywhere between 3 and 10 hours, again depending on the cut.

X2 for me also. I use a Big Chief, so its pretty easy and predictable. Good Luck!

I go 150 until it gets to the consistency that I like... averages around 3-4 hours depending on the thickness of the meat.

Here is the finished product. Cured the turkey for 18hrs and ran the smoker at 130 to 150 for 9hrs. I am extremely happy with the end result

Dunno if it matters..but you never mentioned it being poultry. Prolly should have hit 165 at some point. But temp over time is also valid. Just donít know the timeline.
