        The garlic was tender. I have made the mistake before of doing this with a prime rib roast that I only cooked to rare temps and the garlic was still crunchy. Sometimes I will roast the garlic first to prevent that, but I figured I was in the clear since I was taking this to a higher temp. And it came out great.

          Man, I love garlic! I wish I would have seen this sooner I might have tried it on the one I am cooking today. Definitely going to try something like this in the future
          I rub it every chance I get!
