  • Help Please

    I put a brisket on last night and went to bed. I woke up at 5AM and seen that I had a pellet misfeed. The brisket was at 185 IT. I took it off and foiled the brisket and put it in the cambro until I got the mess cleaned up. I restarted the smoker and it is up and running. The brisket got down to 156 IT in the Cambro. Is it ok to put it back on the smoker to get it to the 197 IT? I am worried because this has never happened to me before and the brisket is for a Co worker for her family reunion today.

    Yer OK Bill... have at it.... might be a tad dry tho...but the foil was the right call. Don't lose the juice!

      Thanks Rich. It is coming up really slow. I am thinking I better let it rest a couple of hours in the pan and juice before cutting. I think I might even leave the point on until I slice the brisket then do the burnt ends after that. I am just freaking out because she will be here at 11am..LOL

        No worries safety wise. What did it feel like when you probed it last? A long hold might have had some unexpected results....

            It was a little tough putting the probe back in. I think I am going to put it back in at 350 degrees for 45 minutes and pull it out and hope for the best. I will post the results later today. Thank you for the help

              I do not know if this would apply to brisket, but I have steam cycle on my microwave. When I warm up left overs, I put juice or plain water or the drippings on the dish and steam the entire meat in the microwave. This seems to bring out the juices and makes the meat more moist. I guess if all else fails, you could try this.

                The Brisket was for the most part saved. It was not as juicy as usual but was still pretty good. Burnt ends going on shortly.

                    I was using half Hickory and Half Mesquite and I think the Mesquite clogged up the Burn pot. First problem I have ever had with a burn pot on a Pellet in 11 years. So I guess I am fortunate up until now. Will not be using Mesquite in the Pellet units again. Will just have to put it in the Amazen tube and add it to the chamber

                        I had them set but it disconnected. I have not had good luck with the Maverick. I should of just used the stoker through WIFI on the Ipad. Lesson learned..All in all everything turned out good and I am sure they will like there food
