  • Margarita Lime Chuckie Tacos

    This is from a couple weeks ago. I know some of you have already seen it but it came out great and I thought I would post it here. Something a little different for the Beef section
    My ingredients


    Splashed it with the margaritas, hit it with some southwest seasoning, and sliced some limes. Wrapped it up and into the fridge for a couple hours.


    After a couple hours in the smoker I sprayed it with more margaritas.


    Foiled at about 160F the took it to 208F. This is after resting in a cooler for a little while.


    Pulled it and sprayed with a little more margaritas and squirted a little more lime juice.



    Had some pulled beef tacos. Came out great.

    YUMMY!!
    I was not going to pull my chickie...I wanted to slice it..but now I am rethinking...that... yours looks amazing, and I bet it made one tastey taco!

        Now that right there looks great... I never thought about using margaritas and lime for anything but altering reality... I gotta try that!

                I don't think I saw this yet, but hot damn does that look like a fine way to prep a chuckie!!! Most definitely on the short "to-do" list ...

                              Really Nice Wutang. Love chuckies...there is nothing like beef off the smoker, and the margarita / lime idea is something I'll put in my bag-O-tricks.
