  • Dutch Oven Pot Roast Smoked, Seared and Roasted Over the Fire Pit

    Been a while since I have posted any cooks. Weather is getting cool here so it's time for comfort foods that help keep us warm on the weekends at the farm. This weekend it was pot roast.

    Chuck roast was on sale this week for $2.99 lb. This one was about 2.8 lbs. I threw it on the Weber first for about an hour at low temp and gave it some hickory smoke!



    Getting the DO ready to sear while Bunny soaks up some sun!



    Seared both sides and the edges, too.






    Added a packet of Lipton onion soup mix, a pack of Au Jus mix and some beef broth. Covered and let simmer until tender.








    Once tender I added celery, mixed fingerling potatoes, carrots, onion and a little garlic. Covered and simmered until the veggies were done.



    Did not get a finished picture that night but we re-heated for lunch on Sunday and it was just as good if not better.

                        Everything tastes better cooked outside. Great stuff my friend, and I have missed your posts.

                        Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                        My best asset however is the inspiration from the members on this forum.

                            I'll tell ya what Becky...I'm gonna buy the property next to yours and whenever I smell smoke I'm just gonna stroll across the property line and look hungry...
