CA - very true; i added it "just in case" it needed a boost in flavour. as it turned out, i don't think i needed to add it, but it didn't hurt, either.

man, I missed this one first (and second) go-round too! Looks great. If only I could get my wife to eat lamb. Maybe I'll try it with ground chicken one of these days.
Mike - I am guessing a 50/50 combination of chicken and pork would be really good here.
All chicken? Possible - I don't see any reason why not, except that it MIGHT be a little dry.
yeah i was originally thinking ground turkey, but I know that would be way too dry. maybe ground chicken thighs with the skin, but I'm not a huge fan of skin in the ground chicken. I think your 50/50 chicken/pork sounds good.
