I've done several left over turkey pot pies so why not use up some leftovers, and try a PP pot pie?
Started by sauteing 1/2 of an onion.
I added a tablespoon of flour and let that cook for several minutes with the onion. While waiting on that, I took 3/4 cup of beef broth and mixed with 3/4 cup of thick BBQ sauce. I used Cattleman's. A thin BBQ sauce would not work well for this.

Added the sauce to the onion/flour mixture and brought it to a boil and let simmer for a bit.
Dumped in 1/2 pound of cold pulled pork and let it heat up in the mixture.
At this point, it smelled and tasted wonderful!
Use whatever veggies you want but make sure they are cooked before adding to the pork mixture. I used potatoes, carrots, green beans and corn.
While the veggies were heating up, I took a store bought pie shell and lined my casserole dish with it, put some holes in the bottom and baked it for 10 minutes. This will help ensure that the bottom crust in done when you bake the pot pie.
Then I filled the bottom crust with the PP mixture, topped it with another crust, scored it and sprinkled it with Mad Hunky.

And dinner
Tasted great but I think I will try some different veggies next time.
