  • Easy Leftover Beer Can Chicken Enchiladas

    Been wanting some enchiladas ever since Keith posted his the other day (http://www.smoked-meat.com/forum/showthread.php?t=3256).

    I had plenty of beer can chicken leftovers (http://www.smoked-meat.com/forum/showthread.php?t=3290) and threw some together last night.

    Sauteed some onions first.



    Added the chicken and some enchilada seasoning.



    In goes a can of tomatoes with green chilies (drain most of the liquid out of the can or simmer until most liquid is reduced)



    In goes the filling



    Into my FAVORITE little casserole dish that my Momma passed down to me last summer. Don't forget to spray a little oil in the dish first. Makes clean up a lot easier.



    Smothered in enchilada sauce.



    I then cover with foil and bake around 350 for about 30 minutes. Remove from oven and add cheese.



    Back in the oven until the cheese is all melted.



    Then EAT!!



    So many different ways to do enchiladas, but this is mostly how I do mine. I really like the tomatoes and green chilies in the chicken and onion mixture. That mixture is also good for a chicken taco salad.

              Looks delicious Becky. Aren't enchiladas fun? The kids loved to help make them. Lots of combos and they turn out great. I like the flour tortillas better too.

                  nice enchiladas Mags!!! i been usising Smoking Lee's enchilada sauce recipie and i am hooked... works good with pulled brisket or chuckie as well. PP prolly be just fine too. on some really good looking "ladas"!!!
