Just picked up a pork belly from Costco and will be starting the curing process. A friend who runs a pawn shop took in a 12" slicer and put my name on it. The holding period and curing time line up almost perfectly. Looking forward to this

Sounds like Great timing!!
I only know a few who can slice Bacon real nice, by Hand (Chef Rob).
