  • Bacon & Mushroom Pork Tenderloin Pozole Soup in the Crock Pot, and Pulled Pork Chimis

    I thawd out the 2nd of a 2 tenderloin pack that I had picked up from Costco. This one was smoked on the UDS for a couple of hours with maple wood. We had no intention of eating it that night, but it was time it came out of the freezer, so I planned on making some Pozole. I can post recipe from M.I.L. if anyone would like.

    Tendie Loin Twin pack


    Smoke Rang




    Cut up a whole yellow onion, and about 5 garlic cloves. Also diced the red pepper in the jar, then threw it back in the jar w/ the juice


    Cubed up the loin


    Mixin in all the goods


    A few hours later on low in the crock pot


    We had some leftover pulled pork from my post last week, so Mrs. Thunder made a couple chimi's and rolled tacos. These are soooo good






    Made a bowl of pozole. Some cheese and avocado to top it off
