Ok, so based on comments from you guys, I bought 6 lbs. of chucks and ground it. Yielded 5 1/4 lbs of beautiful ground beef. I estimate from 15 to 18% fat. Ok, I have to admit this looks nothing like I buy at Costco. Haven't cooked any of it yet, but it looks really good. I resisted any seasoning, since I don't know what it will used for. I mean, it's ground beef, not sausage
