Had a few with this past belly cook but wanted to share this one. Pictured is the leftover tied belly, sliced thin, in the frying pan with some fried onions. Grilled a brioche roll (my favorite) in the same pan, piled on the pork and onions and added just a bit of hickory smoked BBQ sauce.
I've done a few bellies as most of you know, and this one was probably my favorite.
