  • A little Yellow Tail...

    A friend from work hooked me up with about 6 lbs of Yellow Tail and said they make fish tacos out of it and it comes out awesome. So I deep fried it after a egg wash and some corn meal doctored up with Oak Grove Creole seasoning salt and pepper. I have to say I have never had this fish before but it Is Awesome for sure... We ate it deep fried....

      I have had it many times, but I don't think I have ever had it cooked.

            I'm not 100% certain, but from the looks of it, your buddy really hooked you up. But not with yellow tail. That looks more like Mahi Mahi. The yellow tail I got in the Keys last year looked similar to tilapia when filleted out.

              Thanks folks, this was caught out of San Diego and he said it is Yellowtail Amberjack? I am not much for Sushi

                          D d d d d deep fried it!!!! Say it isn't so!!!! Next time cold smoke it and by cold smoke I mean no more than 40-45 degrees ambient temp in the smoker. Use a fruit wood like apple or peach. Smoke for 30-45 mins tops. Then sear it each side over super hot coals 2-3 minutes top leaving the middle rare.

                            Amberjack is one of my favorite fishes period. I find it to be the BEST fish to smoke, IMHO, and it has a nice amount of oil and is mild flavored, too. I have had it fried, sashimi style, smoked, sauteed, grilled, blackened (excellent!), salad (tuna style), smoked fish spread, baked, and even done in banana leaves on the smoker/grill. It is just an excellent fish period. I'm sure your fried jack was very good. If you ever get some more I would smoke some of it with a mild smoke. We get amberjack when fishing & spearing here that go to 80 pounds but 30 - 40 is normal. It is a great fighting & eating fish.

                              I still have about 3 lbs of fillets in the freezer, I used up about half of what he gave me. He asked me for some Chorizo so I am going to make him up a fresh batch for Monday. Thanks again for the replies and suggestions...
