  • Sausage meat

    Anyone here ever try smoking sausage meat or ground beef.. making sausage this coming weekend wanting to maybe try smoking some.

      I have smoked tons of sausage looking for ideas to smoke the unstuffed meat

        Sounds like it would be similar to the chopped and formed beef jerky. Get yourself a jerky cannon and you’ll be good to go

          You gotta be real careful of the 40 to 140 rule! Not sayin it can't be done if it's cured. Butt most all cold smoke after curing and stuffin.

          Now if you're hot smokin that be different.

            Smoke a meatloaf, you will never go back to cooking them in a conventional oven. Or a Fatty.... so so so awesome, both of them.

            Smoked sausage is awesome.... my buddy smokes ground beef for his tacos and loves it.

            What did you have in mind? Maybe we can be of more help

              Smoking the sausage meat so it can be used on tacos cabbage rolls and god knows what else I can dream up.. I what’s thinking about placing the sausage meat on a Bbq buddy or something similar.

                IMO, You should be good to go, as long as you get it up to temps in thyme, as Mark mentioned

                    I have a jerky canon and i have always wanted to make a skinless sausage like they serve at 7/11 with it.

                      easiest way to make skinless sausages is to weigh and form by hand then freeze before vac packing. Then simply cook like fresh sausage.

                      I usually roll the weighed ball of sausage in very finely ground seasoned breadcrumbs (NOT panko - slightly stale bread is best) then roll into sausage shape and freeze.
                      The breadcrumb makes a thin skin that stops it sticking to bbq grates.

                      Basically if you go skinless, the only thing you need to make sausages is a cheap food processor. Which has the advantage of mixing while it chops.
                      Once you get up to speed it's not much slower than stuffing and twisting :-)

                          +1. Cedar Planked Smoked Meatloaf wrapped in Bacon.

                          I like to smoke a 1 lb chub of Sausage then slice it and skillet fry it. Love the smoky flavor.

                          Another favorite is scotch eggs. Awesomeness.
