    Wow! Awesome job!
    Thanks for your diligence in posting a decent tutorial. We have spent a lot of time trying to find a template for a fridge smoker and had not found anything suitable. Your design is simple and straightforward. Thanks again!
    BTW...should a person introduce moisture when doing BBQ and if so whats the simplest way to go about it without getting things too complicated?

      Welcome to Smoked-Meat Kurt... Not sure why you would want to bring in moisture to the smoke.. But if that's what your wanting to do I would use a 3 pound coffee can or stainless steel bowl.. Put it in the smoker and place it close to the heat source for your evaporation...

      I'm sure a few other folks can chime in...

        To reiterate... while some do use water smokers..it's mainly a temp regulation thing. One does not add moistness to the meat by steaming it. that is accomplished by temp control, quality of meat and the pre-treatment of said meat..AKA brining, injecting, mariation, etc.
