  • Brick built gas smoker

Hi guys been a long time lurker but not posted yet so here goes.

I have recently just finished my brick gas smoker.
I live in the UK and sourcing charcoal all year round can be challenging,so we thought lets go gas.
I trawled the interweb for a while looking for designs and came up a little short.

Now its not pretty and I know my brickwork is a little messy, but it the inside is where it counts and that's fine with me.

So issues i have found is that the burner I bought is way way way over what I need, its a 9kw burner and as of now we only use the smallest ring, anything more and it turns into a full on furnace.

Only thing i need to do now is get a different burner, hopefully something temperature controlled would be awesome.

Thanks for looking guys and hope to share some cooks soon

    looks interesting.
Probably a good idea to get some sort of heat shield between the burner and the shelves.
A big heavy duty roasting tin would help - also catch any drippings.

Don't be tempted to put water in it though - that just makes a big steamer :-)

    Good job - have some

Agreed, but since the burner is sooo close on small smokes use the top shelf then add a tin pan (As CA suggests) to catch the drippings. Then have a heat shield plate with some small holes above the burner spreading the heat and not cooking off your drippings.

YA know..a full on .25" steel plate on the bottom might not be a bad call.. place a chunk of wood on top..
