                  Had a rain day this week so had to get another batch done, 4 more totaling 50 lbs. Same routine, except this time the burnt ends got sauced with a raspberry jalapeño sauce, turned out very well.

                    Nice little meat cutter ya got there. Time for me to stock up on little brisky or two. Maybe not 17. ;)

                    Got a freezer full of dead animal but my heart still yearns for a good packer fresh out of the stick burner, all smoky from some local pecan and hickory.

                    Looks like you will have some tasty leftovers despite the party.

                      I do like this meat slicer, works very well. 4 more briskets today and 4 tomorrow and I'll be done. These have been wet aged about 50 days now. No injection, no wrap, no Sous vide, no burnt ends.

                            OK, I'm all done with the 17 briskets, the first 9 had sv involved and the last 8 didn't. I can say with 100% certainty that the sv ones are definitely a better end product. I've tasted every single brisket before bagging them up and it's not even close in my opinion. I do feel that the fully smoked ones looked better, but flavor and taste go to the sv ones. That's all I got, Happy Mothers day to ALL the great mom's out there!

                              I HAVE to comment on this older thread. I am going to do my first brisket next week so I was doing a little thread surfing, this thread is awesome! One hell of a project. The beef looks outstanding and the burnt ends amazing!!
