    I just pulled 2 brisket points out of their corning mix. Here are the pics of both sides of the points. I haven't rinsed them yet. One weighed 3.36 lbs and the other weighed 2.54 lbs.



    Here's the dilemma. Do I rinse, re-season, and throw them in the smoker to make pastrami out of them or make pastrami out of one and cook the other one for a corn-beef dinner.

    I love pastrami, if that helps.
    Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
    My best asset however is the inspiration from the members on this forum.

                Well, I thought about it last night and decided I would rather enjoy sandwiches for a while than one meal.

                Sooooooo, pastrami it will be.
