While shopping at Sam's I was perusing the meat section and remembered I have not cooked chicken wings in quite a while and it was way overdue. My wifey concurred so I bought a package and cooked half for dinner and froze the other half. I prepped the wings by removing the tips and separating the drumette from the flat. Then I added a pint of water and 5 TBSP of Mad Hunky Poultry brine and let the bird arms soak for 6 or 7 hours.
I drained the wings and laid them out on a sheet pan and gave a coating of Mad Hunky Sweet Heat rub while the Webbah was coming up to temp.
I did the standard method of wings around the Vortex with a hickory slab in the middle and let them go 20 minutes before flipping. Here they are at the flip.
While they were finishing, I made a sauce of bbq sauce, honey, butter, maple sugar, green chile salt, garlic powder, and sriracha sauce. I pulled the wings and they looked pretty good. I tossed them in the sauce and dinner was on.
