I had a hankerin' for some puerco pibil, hadn't made it in a while. I know a few others here have made it as well.
I picked up whole pork roast, took half & deboned it...
Cut it up & marinated it overnight...
Threw the marinated chunks on the Horizon at aboot 220°...
After 4 hours of mesquite smoke...
Finished it off in the slow cooker...
And on the plate with a bed of rice w/cut corn...
The Puerco Pibil came oot fork tender with just the right amount of smokey flavor. Goood stuff!!!
