  • Shepherd's Pie

    Today/tonight I fixed one of Pam's favorite meals for dinner, Shepherd's Pie.

    Start off sauteeing a holy trinity(onions, bell peppers and celery) & minced garlic in butter

    Once everything was softened, I added in peas & diced carrots to cook
    When done I'll set this mix aside for use later

    Now I'll lightly brown some seasoned ground lamb

    After the browned lamb is drained, I put the lamb, veggie mix, some veg stock, rosemary, & thyme to cook for a while

    When cooked down some, I added some corn starch to thickened the gravy

    Now you could pour mixture in one pan or as I like to do, divide the mixture into individual Ramekins because this makes more than one meal and Pam likes to take to work for lunch

    While all this was cooking, I was also cooking potatoes for the mashed potatoes that will be placed on top of the mixture in the Ramekins

    Ramekins topped with shredded triple cheddar cheese. Then into the oven @ 350° until cheese is melted and IT is 160°

    Out of the oven and served with toasted Italian bread slathered with garlic butter

        If there is a better definition or portrayal of comfort food, I'd like to see it.

        Outstanding Jim.

        Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
        My best asset however is the inspiration from the members on this forum.

          Love a good shepherds pie but that looks awesome BYBBQ like the idea of the ramekins (BTW - I never knew the name of them ) I'm gonna steal this recipe if you don't mind

              That is a thing of beauty. I make it all the time in winter, just like chili it never gets old. Great job.
