          I don't mess with the sausage at all. Smoked these babies in my CharBroil Silver Smoker.



          I use lump charcoal for heat and I use almond wood to produce the thin blue.



          I smoke at 220F until the internal temp is 155.

                Oh... I like to smoke JD hot...I don't cut it in half...Smoke to 140-145...Chill quickly...Later I slice and pan fry it...

                  I usually just heat it up in the toaster oven, which works just fine, but I bet crisping it up in a frying pan would be excellent.

                  Can't wait to try it now.

                        Paymaster, you are SO right! I seriously need to get busy on some biscuits.


                        SMOKE FREAK, I used to smoke them whole, but I think you can get more smoke in them by slicing them lengthwise.

                          Hell, I did these today as we have some weather coming. No need for me to mess with success. This was a Huge Hit with everyone in my house. I need to do another batch very soon!
