        Just a couple of slices with the cornmeal bark. The bark isn't thick but the flavor is to die for...

            When you are temp probing the brisket, are you probing the flat or the point?

              Just used more wood MMP, that's all and had to keep an eye on everything a little bit more. My probe went in on the thickest part of the Brisket (Flat)...

                Zeek my man, you got it goin on dude. That brisket is off the hook man. And the peameal bacon, I had it once n loved it. Never tried makin it, but think I will now, so I'll be hittin ya up fer info my friend. great smoke!!
