  • Zeek's Saturday Brisket

    I picked up a 10 lb Brisket and got the smoker started this morning, should be ready to put on by 7am est. Winters coming and It's getting cold out here and it might be hard to keep up temps (I guess we will see). Using Oak and Plum with my own bold beef rub. Just going to have a fun day smoking and drinking lol. A couple of starter pics and thanks for checking out my smoke...

    Nice looking brisket. It doesn't appear to have as much fat as some I've done. Keep us posted.

        Put her on at 7:30am. It is harder to keep temps. I might be in for a long day...

                  Decided to do my 12 lb's of CB today instead of tomorrow. Wrapped in a coat of corn meal. Brisket finally hit 150 and hav'in a blast. Got to get more beer. lol (Sorry, I didn't want to open a new thread on the same smoke)

                    Brisket just hit 170, ready to foil and CB getting a corn meal bark.

                        Wow, nice Zeek. Want to see the CB when done. Any special reason for the corn meal bark? Never seen that before.

                          It's just a Canadian thing RR, got'a have the bark. We pretty much do it all the time. Tastes great with eggs and hot sauce...
