            Not too much, but a good open area on top to collect the magic smoke. About the right sized pan. This weekend it's ribs n corn, tater salad and beans. Gonna try this one, I like Pinto beans, tired of the same ol' Boston baked, time for a change.

              It's not a panful..no. The 9X11 spreads it out for faster smoke flavor is all I can figger. It's about..err.. man been too long.. a solid quart. A full pan..I'd guess X4?

              I need to do these again. Been too long. It's a damned good recipe.

                    If I remember correctly I did these on the stove in a pot. And I'm pretty sure I ate way more than a 1/4 cup.

                    I think Rich and Conundrum are right . . the pan provides more surface area for smoke or drippings from any porky goodnesss that may be in the smoker above the beans.
