Here's a fun little dessert that I made recently. It's a mini apple tart with sea salt caramel ice cream. It's really pretty and tastes great too. I made the tart shells and blind baked them. I made pastry cream that went inside the shell then thin sliced apples. I added a little sugar and honey to some water along with lemon juice, brought it to a boil then removed it from the heat. I dropped the apples in for about 5 minutes then removed to a paper towel. Placed three apples slightly overlapping and rolled them up. Each one went in to the shell with the cream. I put the water mixture back on the stove and reduced it to a syrup and brushed the tops of the apples. I made the ice cream using a basic custard base but used brown sugar instead of white. Whipped up a quick caramel sauce. Sprinkled a little Fleur de sel on top.
