5 Lbs tight trimmed pork loin jerk cut.
Soy sauce .5 cup
Wasabi mustard 5 Tbsp
Water .5 cup
6.25g Cure #1
2 tablespoons honey
2.5 tablespoons Kosher salt
2 tablespoons sesame seeds
5 NuMex Twilight peppers fine dice
I din’t have any ginger..or I’d of added a tablespoon or so of that.
Could have used a bit more heat too..so crank that a bit somehow.
No smoke..straight dehydrate.
