You don't have to use beer. I drink it all the time and don't like in the chicken. Crazy right? Try apple, orange or pineapple juices. Several sodas/pops work very well too.

The concensus is......

well, the two brines are awesome. Honestly, I nor my Wife could tell much of a difference between the two. The Allsmokenofire one is good, but the pickling spices are (1) at times hard to find, (2) it takes two and a half containers for the recipe, and (3) the pickling spices are a pain to deal with after draining; if you get them in the sink, they will clog up the drain. Overall pretty easy though, and very little ingredients.

The Smokin' Okies brine is a bit more involved, takes more ingredients, but the ingredients are readily available and break down in the brine almost completely. The allspice can be a bit hard to come by.

I am thinking that for the time being I'll stick with the allsmokenofire brine; even though it has the pickling spices to deal with, the ingredients are very low and it doesn't take as long to get together. I may combine the best parts of both and see what I can come up with myself.
