Spiedies, pronounced “speedies”, are a NY regional favorite and for good reason.
For those of you not in the know, Spiedies are skewered grilled meat that has been
marinated and dressed in Zuzu sauce, placed in a toasted hoagie, sub, hot dog bun
or Italian bread and eaten as a sandwich.
Zuzu works with lamb, pork, beef and even venison but today we are making Chicken Spiedies.

I use chicken thighs for this cook because I want the finished product to be as tender and juicy as possible. A long 24-72 hr marinade time.
Skewered Marinated Chicken
Chicken hits the Primo XL. Grill over direct heat.
Yay!!! Spiedies!!!
Reserved marinade simmering on the stove
Italian bread grilled and moistened with Zuzu
Throw on some shredded lettuce
Add a couple of Spiedie skewers8
Brush some simmered Zuzu onto the finished meat. Now that, my friends, is a thing of beauty!
This completed Chicken Spiedie Grilled Sandwich is worthy of the grill Gods!!!

Rich...if only it were possible to spread the Spiedie word so easily. Once upon a time, long long ago, I lived in Spiedie country. Spiedies were abundant, and seemingly, everywhere. Not no moe. Now we make 'em ourselves and they are fan-freakin-tastic.
