    I bought the jelly @ a farm stand, I melted the butter, then mixed in the hot sauce, spices, and jelly and simmered for a couple minutes. Then just tossed the wing segments in the sauce and served.

    Nice touch of heat, vinegar, and then sweet on the back end.



    Thanks a million for that I copied all the sauces you had posted in this thread they all look awesome. Just finished building a new smoker so off to the store for some wings and going to give them a try tomorrow have to season the smoker to night and try out the new controlls, I built them myself too. They worked well on the bench so I am hoping all goes well with the first cook.

              ill tag onto my old thread:

              brined up some natural chicken wings for a few hours saturday before double deep frying them. Basically you deep fry the wings at 325 for about 10 minutes, pull them out of the oil, and do some other batches of wings. 2nd time through the fryer crank it up to 350+ and crisp that skin.

                                straight up veg oil, I like using peanut oil, but it is too costly to use and toss as a couple pounds of wings just trashes the oil.

                                The double frying works great, really crisps up the skin.
