  • Creole Chicken Galantine

    This is a cool recipe and technique.

    Anyway, chicken deboned and seasoned



    My stuffing is crawfish tails, celery, bell pepper, onions, fresh cheese tortellini and herbs and spices. Don't forget to stuff the legs where the bone has been removed.


    Stuffed, rolled, and tied. This is one of my better ones.

      Now that is a freakin great job! I will be shelling some out to ya just for the prep work ya did. I can't de-bone a chicken to save my a$$....can't wait to see the mega update on this bad boy.....I wonder na it couldn't be bad to the bone could it

                    this is going to be awesome..........thx for posting the vid of jacques. i had the pleasure of cooking with him for a day. if there was anyone to watch cook, this is the one. he teaches on such a humble level and has zero hang ups.

                          Thanks everyone. Well, I ended up out of charcoal so I'm doing it on my gas grill with a foil roll of hickory sawdust. I'll get pics for sure even though the booze is starting to take hold.

                            I don't care if you threw it in the oven, I know it's gonna be good. I'll have to watch that video a few more times and maybe learn to debone a chicken.
