    LOL, Mark, that comment was by Squirrel from another thread.
    I pulled it and threw it in a 400* oven on a rack. Skin is sizzling up good! The breast was 168* I think and the thigh was like 162* That sound right?
    I rub it every chance I get!

      Smells so freaking good. Smoked it with mesquite and I can smell that Mad Hunkiness!

          *165 minimum and a little higher won't hurt either IMO... Mesquite eh?... Interesting for chicken... Looking forward to your review.

            The mesquite was great. It is really growing on me. Still not sure I would do a butt with it straight out but for Beef and now chicken, it is excellent. The Mad Hunky was outstanding. Amazing. Really. I'l be doing this more frequently. Finishing it off in the 400* oven was the way to go man. Very crispy skin.
            Served it up over some cheese raviolis with a nice private press olive oil from the Olive Mill and my daughter made some killer sauteed green beans. We had Caesar salad and toasted bread as well.
            I rub it every chance I get!

              az, my friend, you done good - sincerely! that's some very fine-looking chicken dinner there. if you wouldn't have said it was your first attempt, i would have thought you were a pro at it! love the ravioli, too! outstanding job, all-around!

                Thanks Tas :D The ravioli was my wife's idea. I was going to do potatoes but when she said that I was like "Hells yes!"

                  keep listening to your wife, bro - potatoes of any kind are just fine; if it were up to me, i'd put 97% of my main dishes next to mashed potatoes! but raviloli sure takes it up a notch. especially on valentines day!

                    Any leftovers and you got a lot of options.... My kids request smoked chicken Mad Hunky nachos about every 2 weeks.

                      Oh man, we celebrated last night since she had to work late. I keep forgetting it is V Day. We did it all yesterday. Gave the kids all their gifts. Made Spaghetti Alfredo with Langostino for dinner and for dessert we had strawberries that we dipped in chocolate!

                            OK, so I am having this for lunch today. AWESOME! I am going to be making chicken like this more often. The Nachos are sooooooo goood Thanks for the suggestion Fish. I wouldn't have thought of it.

                                Ok Tas, one of these days I'll give it a go. I love chicken pot pie but my wife turns her nose at it for some reason. Not sure I could talk the kids into it without mom having my back :D
