I dunno..I trim... cut to quarters and peel out the core. And usually don't cut myself
that core is FULL of bromelain- medical and food uses. Be careful... it's potent

you get different sizes of cutter - you just get used to buying the right sized pineapple.
I always slice the carcase for any extra, but rarely get any. Like I say you get used to buying the right size pineapple for the cutter.
Now over here, pineapples have been ridiculously cheap this year.

We quit buying Pineapples after finding out what they're supposed to taste like. We toured Dole Pineapple when I was stationed in Hawaii. I couldn't believe how awesome they were!!! They cut them in Spears & hand them out to tourists.

Since we are talking pineapples, there's this awesome vinegar a Puerto Rican lady told me about. Something like Vinagre de Pina. Pineapple vinegar basically. It is a way for them to use up the peels of the pineapple. Peels get boiled down and then you add whatever peppers and onions you want. They leave it to ferment and form a mother. I put mine in the fridge. Here's some I did a while back. It's really good on pork.
