mexican chix & rice-arroz con pollo(adrohz cohn poy-o)gotta say it right.
4-5 chix quarters seasoned w/ fajita spice,onion pwdr,garlic pwdr,comino(cumin),sage,& cilantro.
2 cups white or yellow rice
2 cups chix broth
2 cups water
1 can of diced maters w/ green chiles
1 finely chopped celery stalk
2 tbsp comino
1 tbsp cilantro
2 caps full of lemon juice
dump in the rice & lay chix on top
cover in oven on 375 for around 2 hours
uncovered for 30 mins
eat & enjoy.
