          Yes, the thinner the bacon, the better for wrapping in my opinion. I am also cooking these pretty hot on the kettle (375*+-) so the bacon, will be getting crisp as they cook/smoke.

          Just cook/smoke til the bacon is the "doneness" you want & get after em .... Oh, and don't forget to let them cool just a little bit.... Yeah, I'm speaking from experience

                    well made my own version of the hawaiian ABT's and thwey are AWESOME. mixed up my Vadalia Onion creame cheese added some chopped and drained pineapple, stuffed it in jalapeno pepper added a ham stick and wrapped in bacon

                              Hey Fish your abts look awesome I'm making them tomorrow and would like to ask you your opinion. when you cut and fill your peppers do you wrap each half or put the two halves back together and wrap? also do you dust the bacon with anything and if so what are some suggestions for dusting. thanks

                                There are a lot of different ways to make them. I think I have tried them all, and they all work. Personally, I like to cut them in half, scrape oot the seeds, apply the filling to both halves, put them back together, bacon wrap, season them and then smoke/cook them.

                                I love the Mad hunky on them best, butt any rub/seasoning that you like will work. The Mad Hunky really makes them IMO.

                                On another note, when you cut them in half, make sure to "pair" the 2 cut halves together, so when you assemble them, you have the same or similar dimensions going together.

                                Bacon stretching is worth the extra effort when it comes to wrapping them, and the final product as well IMO. It might seem awkward at first, butt you will get the hang of it, the more you do it. Same goes for the wrapping process
