Today/tonight I fixed one of Pam's favorite meals for dinner, Shepherd's Pie.
Start off sauteeing a holy trinity(onions, bell peppers and celery) & minced garlic in butter
<img src="https://farm5.staticflickr.com/4498/36607039974_8938337342_b.jpg" width="800" height="536" alt="lsp1_001 (Custom)"></a><script async src="//embedr.flickr.com/assets/client-code.js" charset="utf-8"></script>
Once everything was softened, I added in peas & diced carrots to cook
When done I'll set this mix aside for use later
<img src="https://farm5.staticflickr.com/4502/37060453490_3e1a59404b_b.jpg" width="800" height="536" alt="lsp1_002 (Custom)"></a><script async src="//embedr.flickr.com/assets/client-code.js" charset="utf-8"></script>
Now I'll lightly brown some seasoned ground lamb
<img src="https://farm5.staticflickr.com/4334/36607040144_d800bafa26_b.jpg" width="800" height="567" alt="lsp1_003 (Custom)"></a><script async src="//embedr.flickr.com/assets/client-code.js" charset="utf-8"></script>
After the browned lamb is drained, I put the lamb, veggie mix, some veg stock, rosemary, & thyme to cook for a while
<img src="https://farm5.staticflickr.com/4443/36646901483_de759a921c_b.jpg" width="800" height="585" alt="lsp1_004 (Custom)"></a><script async src="//embedr.flickr.com/assets/client-code.js" charset="utf-8"></script>
When cooked down some, I added some corn starch to thickened the gravy
<img src="https://farm5.staticflickr.com/4350/37459360475_9ab7cab862_b.jpg" width="800" height="562" alt="lsp1_005 (Custom)"></a><script async src="//embedr.flickr.com/assets/client-code.js" charset="utf-8"></script>
Now you could pour mixture in one pan or as I like to do, divide the mixture into individual Ramekins because this makes more than one meal and Pam likes to take to work for lunch
<img src="https://farm5.staticflickr.com/4496/36646901573_f089f513ca_b.jpg" width="800" height="536" alt="lsp1_006 (Custom)"></a><script async src="//embedr.flickr.com/assets/client-code.js" charset="utf-8"></script>
While all this was cooking, I was also cooking potatoes for the mashed potatoes that will be placed on top of the mixture in the Ramekins
<img src="https://farm5.staticflickr.com/4383/37459360545_0956c11708_b.jpg" width="800" height="536" alt="lsp1_007 (Custom)"></a><script async src="//embedr.flickr.com/assets/client-code.js" charset="utf-8"></script>
Ramekins topped with shredded triple cheddar cheese. Then into the oven @ 350° until cheese is melted and IT is 160°
<img src="https://farm5.staticflickr.com/4407/37319058111_32ffb97d1b_b.jpg" width="800" height="536" alt="lsp1_008 (Custom)"></a><script async src="//embedr.flickr.com/assets/client-code.js" charset="utf-8"></script>
Out of the oven and served with toasted Italian bread slathered with garlic butter
