    Not really a side item... More of a appetizer, Ahumado Bandolero's ( Smoked Outlaws ).... These are the guest's of honor for this smoke...


    1 Bag Of Scoops (You can use Fritos or Tostitos)
    1 Package Hot Taco Seasoning
    1/4 Cup Fine Chopped Onion
    4 to 5 Heaping Tbs. Salsa (Water Drained)
    1 to 1 1/4lbs Lean Ground Beef 93% (Or Venison)
    1 Medium Avocado
    4 Tbs. Sour Cream


    This amount should make 36-48 appetizers..






    Mix meat, onion, taco seasoning in large bowl.. Once mixed well take about a teaspoon of mixture and place in each scoop.. (Try to use the larger ones)




    Crank up your smoker to around 300-325*.... Place in smoker on a cookie rack and add very little wood.. Smoke to 160* internal temp.. (You will need a hand held probe) They wont take long to hit 160* around 30 minutes...

    While they are in the smoker, take your avocado and mash it in a bowl with a squirt of lemon or lime juice and salt & pepper...Place in small zip lock bag.. Do the same with the sour cream..


    When they come off place on serving tray and decorate.. Cut a small corner of your bags of sour cream and avocado.. Place a small amount on each one...

    At this time you can add small slices of jalapenos, crated cheese... Serve up and enjoy... They wont last long trust me..

        Ken, you're killing me here. I ate all the scoops last weekend. Got 2 pounds of venison in the fridge for burgers tonight too. Ok, I'll have to stop on the way home tomorrow. Can't wait to try these.

        My oldest son just stopped over. He's the one loves the hot stuff. Saw the pic and says, wait! What's that? He's drooling over my shoulder.
