Default Wicked Baked Beans

I don't think this place should be without Dutch's Wicked Baked Beans. These continue to be one of the most requested sides that I get when having folx over for Q.

WICKED BAKED BEANS
(Beans that will even make Chili Heads happy)

6-8 strips of bacon cut into 1/2 inch squares
1/2 Medium onion, diced
1/2 Bell pepper, diced
1 - 2 Jalapeño Peppers, diced (seeding is optional)
1 - 55 ounce can Bush’s Baked Beans
1-8 ounce can of pineapple chunks, drained
1 Cup Brown Sugar, packed
1 Cup ketchup
1/2 - 1 Tbs. dry (ground) mustard

Sauté bacon pieces in fry pan until crispy and remove from pan with a slotted spoon. Sauté onion, bell pepper and jalapeño pepper until tender.

In a large mixing bowl combine beans, pineapple, brown sugar, ketchup and dry mustard. Stir in bacon pieces and vegetables. Pour into a 12X9 or a deep 9X9 aluminum baking pan. (While mixing if things look dry, add additional ketchup 1/4 -1/2 cup at a time)

Place in a 220-250° smoker for 2 1/2 – 3 hours (make sure temperature of the baked beans reaches 160° ) or place in a 350° oven and bake for 1 hour.

NOTE: If you are making these beans as a side dish for Kansas City style pork ribs, smoke the removed skirt meat for 1-1 1/2 hours, then dice the skirt meat and stir into the Baked Beans.

DISCLAIMER

With the Jalapeño pepper and the dry mustard these beans have the potential for some MAJOR heat. CAUTION should be exercised when feeding these beans to small children and/or the elderly.

To make this recipe Family Friendly, omit the Jalapeño pepper and the dry mustard.

Hey Kev, I couldnt agree more !!! I get more compliments on the beans than anything else... I have found that im getting immune to the jalepenos so i now mix in some serrano peppers.. Gives it a bite:D

looking at that tray of beans - them look like pinto beans to me.
Over here I think baked beans are haricot beans. They're bright orange and smaller than that for sure.

I have now got some pinto beans - anyone ever made these from scratch - ie: without using tinned beans and if so, got a recipe ?

Try this CA- Follow the orginal recipe but do the following for the dry pinto beans.

1 cup of dry beans will yield 2 -2 1/2 cups of cooked beans. 1/4 cup of cooked beans is 1 serving.

Soak pinto beans over night or boil for 1 minute then let sit covered for one hour.

Drain soak water from beans and add the 3 cups water. Bring to a boil, then cover and reduce heat to simmer. Cook until beans are tender – about 1 1/2 -2 hours. Drain well.

Add remaining ingredients and mix well. .

If you are going to smoke the beans, pour bean mixture into a 9 X11 X 2 3/4 inch foil pan and place in smoker. Give the beans a stir several times through out the smoke.

I wasn't sure if this recipe was here. I found it at another site.

Anyway, I made some a while back for the people at work. They loved it. We have another pot luck tomorrow, and had requests. So, I have a double batch of them cooking right now. Not able to smoke it, but it'll still go over great.

All I can say is, thanks Dutch! The wicked baked beans is great.

Been using your WICKED BAKED BEANS for a year at all my BBQ's with family.
They love them...
We usually dont have all the same spices so sometime we add or dont use one or two. still turns out GREAT...

We add more and more Jalapeño Peppers as we get really old or weak pepper up to three now and the fam does not like HOT stuff.

Hi CA,
Try using cannellini beans, or any creamy white bean.
Our Bush’s Baked Beans are like your Heinz beans you have for breakfest only Bush's is sweeter and usually has bacon in it.
You could use your Heinz and with all the other stuff you it would have enough sweet and flavor.

Yep Jerry, them beans are great any which way you make them. Some mornings, Ma Dutch will throw a small batch together in the crock pot before she goes to work and then turn the pot to "warm" when she gets home and they're ready to plate up along side some left over 'que or just off the grill steaks or thick cut pork chops.

The last bunch of Jalapenos I got were so mild I thought I was using Tam Jalapenos-No heat at all in those things. I ended up putting some Frank's Red Hot in that batch of beans just to add heat to 'em!

I've made these beans for the last 2 years when we have people over for a cookout or sporting events like the Super Bowl. They always have been a huge hit with friends and family, in fact, people are now requesting them when they get invited. Thanks Dutch, you have made entertaining much simpler.
