Shrimp Rubs
So Mk 1 Spicy.
These are all volume measurements: tsp, tbs, cups etc - as long as you keep the same measuring device for all the ingredients it'll work out fine :-)
5 brown sugar
1 powdered garlic
1 dried onion
1/2 chinese five spice powder
1/2 coriander seeds
1 seasalt
1/2 peppercorns
1/2 ginger powder
1 paprika
Grind to a fine powder and sprinkle liberally over shrimp or fish. Also great if made into a thick slurry with some ketchup
MK2 regular this is a sweet slightly aromatic rub that is good for everyone and got the thumbs up when I tested it out monday.

Now this afternoon I ground some pork up for sausage or jerky or something. I always mix the stuff I extract from the grinder witha little rub and microwave. I like it, and that's what counts lol.
Used some of the sweet shrimp rub. Wow !
So I mixed up a double batch,. With a little experimentation came to the usage of 4 good tsps per pound of meat. measured that out and added the correct amount of cure #1 for my ground meat.
Mixed with a few oats and it's going to be a sweet, ground pork jerky.
From initial quick cook tasting, I reckon this stuff is going to be unbelievably moreish :-) And will probably be used as a replacement for my chinese rib jerky seasoning.
