  • Fishawn inspired chicken fritters :-)

    http://www.smoked-meat.com/forum/showthread.php?t=44845

Saw that and had to try it :-)

Don't see much point in chicken breast - so used thigh meat.
Didn't have any spring onions (green onions) so used shredded normal onion and some bellpepper.

Added dried onions to the sour cream dip, both for flavour and texture as my dipo was pretty thin, for some reason the sourcream went thin when I mixed the other stuff in.
Tasted fantastic, and really complemented the fritters
Also not something I would ever have thought of

    Fritter mix:

Frying tonight - mix of butter and rapeseed oil:

Also cooked dauphinoise potatoes and home grown runner beans:

    Tray with dip:

Finished it off with a toblerone cake I got in lidl :-)

    Thumbs up all round !
A real hit and something different.
    Cheers scott !

    Keep the inspiration coming

              Cheers for points.

I also threw some philli in the dip to try and thicken it up.

Tell you what though, warm a couple of these up and have them in a sandwich with the dip and I reckon that's almost as good as fresh cooked
What i just had for lunch :-)

I do my pulled chicken thighs in the (brace yourselves) microwave !
So the method: get a pack of skin on and bone in thighs,
Remove the skins, but don't throw away !
put the naked thighs (ooer) in a large glass casserole dish - preferably with lid.
Liberally cover with MHGP and I usually throw in a a few pinches of salt and extra garlic powder.
Then spread the skins out and cover the chicken. Doesn't usually use them all.

Nuke (time based on 850watt microwave) for 5 minutes.
Remove from microwave and carefully put skins on lid, pour most of the liquid in the bowl away. turn over thighs so inner faces out, reseason. Replace skins and lid.
              Nuke for another 5 minutes.
Poke with thermo pen. You're looking for between 75 (167f) and 85c (185f).
Might need another couple of minutes.

When temp reached, pour off about 70% of the liquid, remove the skins and leave chicken in bowl with lid on to cool.

Skins can either be fed to salivating canines - or eat them yourselves (what I usually do - unless dogs are sitting and staring at me, then we'll share :-)

Once chicken is cool enough to handle, pull off bones and mix with any liquid. Nibble bones and discard.

I find that a 750g pack of thighs will yield around 1lb of pulled chicken meat.
Well It did yesterday 'cause I weighed it :-)

I usually do this if I'm, here on my own and it'll do me for a couple days meals.
usually make some fresh tortillas and have wraps one night and either use the rest of the chicken in a pasta dish of stir fry the next day. And now fritters can be added to the options :-)

I wouldn't recommend cooking breasts like this, they tend to go leathery and a bit chewey in the microwave. Thighs are a lot more forgiving with better taste and texture (well I think so) and do cook really well in the nuker.

the toblerone cake was pretty good - came frozen. Nice crunchy base, with chocolate mousse filling and milk chocolate covering with little bits of toblerone mixed in.
£3 - if i were Squirrel I could have made one with my eyes shut in about 10 minutes.
I'm, not squirrel :-) That thing would have taken me all day to make and cost more than £3
